I (Rose) have worked as a pastry chef in a professional capacity for multiple years. I am certified by ServSafe for both Food Handling and Allergen Management. I am a licensed Home Processor in the state of New York. As I work out of a home kitchen, all my baked goods are also subject to Cottage Food Laws, which I strictly adhere to.
All baked goods from La Gata Pirata Bakery are gluten-free, vegan, and free from the top 9 allergens recognized in the US. That means out food is free from dairy, eggs, peanuts, tree nuts, wheat, soy, sesame, fish, and shellfish. However, please note that we do use coconut in out baking. While not recognized as a tree nut, some individuals with tree nut allergies can still show reactivity to the fruit.
If you possess an allergy or dietary restriction outside of those listed above, please reach out and I will do my best to accommodate.
We only source ingredients from brands that promote allergen safety. That means no "shared equipment" warnings get past us. In addition, all bakeware used for this bakery are exclusively for that purpose, and the kitchen we operate within is cleaned and sanitized regularly. That being said, please always perform a "safety bite" before fully indulging in our products if you have a life-threatening or severe allergy.

For any treats that fall under our "Baked Goods" section, we appreciate an advance notice of three days. Custom cakes/cupcakes and signature cupcakes require at least a week's notice to source the ingredients, flesh out the design and complete decoration.
